Blackened Cauliflower Tacos

Wether its “Meatless Monday” or “Taco Tuesday” this is a sure crowd pleaser!

I made these for some friends and their exact words were “I never knew cauliflower tacos would be good”. I love making veggie meals that are pleasing to carnivores (:

Cauliflower Mix

  • 1 Head of Cauliflower Chopped

  • 1 Medium White Onion Chopped

  • 3 Cloves of Garlic Chopped (I add extra)

  • 3 tbs Blackening spice

  • 3 tbs Walnut oil + 1 tbs Walnut oil

  • 8 Small Corn Tortillas

Chop the cauliflower and put it into a large mixing bowl with 1tbs walnut oil + blackening spice. Set aside. Heat up a large skillet. Add walnut oil + garlic + onion. When the onion is translucent add the cauliflower + stir.

put on medium heat. You may want to add 3tbs of water to help cook faster and avoid burning. I like to add some dried red chili flakes for an extra kick! You want to cook your cauliflower so that it can be easily punctured with a fork. If you feel more comfortable you can always steam it in the microwave first and then add it to the skillet to give it a little char.

To heat up the tortillas heat another skillet without any oil or water. It is important that the skillet is dry and hot. Place tortillas on the hot skillet for about a minute each side. You want a nice little crisp + still flexible. This takes practice. I’ve still not been able to master this step. Thankfully I always have extra tortillas.

Avocado Sauce

  • Large Ripe Avocado

  • 1 Large Apricot Chopped

  • 1 Large Tomato Chopped w/o seeds (any type you prefer, use 2 if they are small)

  • 1 Bundle of Onion Chives Chopped

  • Juice from 1 Lime (or lemon)

  • 1/4 cup Cilantro Chopped

  • 3 Cloves Garlic Chopped

  • 1 tbs Apple Cider Vinegar

  • Salt & Pepper to taste

Add all of the ingredients into a mixing bowl and mix together. I recommend mashing up the avocado and tomato so they are a bit more creamy. I also like to add my chives at the end so they stay a little more crunchy. Since the garden is in full bloom I’ve been adding some fresh mint to this recipe. It really gives a nice little surprise to your taste buds. You cant mess this up, it is fool proof! I recommend making this sauce before the cauliflower and placing it in the fridge so that all of the flavors can marinate together.

Now for the assembly --- Take one corn tortilla and place a spoon full of avocado sauce on top followed with a scoop of cauliflower mix.
