Bok Thai Soup



Serves about 4

  • 16 cups of water

  • 1lb sliced portobello mushrooms (I use about 2lb)

  • 2 small red peppers sliced

  • 3 small Bok choy chunky chopped

  • 1 medium white onion

  • 1 head of garlic chopped

  • 1 small chili pepper chopped (leave the seeds for more heat)

  • 2 cups dried quinoa

  • Juice of 2 lemons or limes

  • Salt and pepper to taste

  • Fresh basil chopped

  • Fresh Chives chopped

Optional - 1lb ground meat (I use bison but beef or lamb will work)

Get a large stock pot fill it with 16 cups of water + salt and pepper + chili pepper + ½ of lemon juice + ½ of garlic + ½ onion + mushrooms + simmer for an hour

add red peppers + Bok choy + cover + mild boil

In a medium fry pan add 2 tea spoons coconut oil + garlic + onion. Brown lightly and add in ground meat. When meat is fully cooked + drain access fat and add into soup + quinoa

Cover + low heat + sit for 30 minutes

Add leftover lemon juice + salt and pepper to taste Basil + chives
